TERIYAKI MEAT LOAF

INGREDIENTS :

380g ground beef, 125g ground pork, 1 onion, 1 egg, 10g ginger, some green cabbage leaves, 1T oil.

SEASONINGS:
(1) 96ml mirin, 96ml sake.
(2) 1T light brown sugar.
(3) 48ml light soy sauce.
(4) 1/4 tsp lemon juice, 1 tsp mirin, 1 tsp sake, 1 tsp caster sugar.
(5) 1 tsp mirin, 1 tsp sake, 1 tsp ground black pepper.
(6) 1/2 cup of panko (i.e. Japanese bread crumbs), 1/4 cup of milk.
(7) 1/2 tsp salt, 1/4 tsp ground black pepper.
(8) 1T ketchup.

PREPARATION :

1. Peel, rinse and mince ginger.
2. Pour seasoning (1) to a pot; Bring to the boil over a high heat; Cook over a medium heat for 2 minutes; Turn to a low heat; Add seasoning (2); Stir over a low heat till dissolved; Add seasoning (3) and the ginger; Bring to the boil over a high heat; Turn to a medium heat; Cook over a medium heat for 15 minutes (stir occasionally); Turn to a low heat; Simmer over a low heat for 25 minutes; Turn off the heat; Cool at the room temperature.
3. Rinse ground beef; Drain; Marinate in seasoning (4) for 30 minutes.
4. Rinse ground pork; Drain; Marinate in seasoning (5) for 30 minutes.
5. Peel, rinse and mince onion.
6. Beat an egg to a small bowl; Beat till well blended.
7. Add seasoning (6) to a big stainless steel bowl; Mix well; Leave it for 2 minutes.
8. Add seasoning (7), the ground beef from the step 3, the ground pork from the step 4 and egg solution to the milk mixture from the step 7; Mix well.
9. Add 1/2 cup of the
teriyaki sauce from the step 2 and seasoning (8) to a small bowl; Whisk well.
10. Add 2T of the sauce from the step 9 to the meat mixture from the step 8; Mix well.
11. Pre-heat an oven to 175 degree celcius.
12. Rinse and drain green cabbage leaves.
13. Divide the mixture from the step 10 into a few loaves with 175g each; Arrange in a baking pan with greased baking paper; Evenly brush each loaf with the teriyaki sauce from the step 9.
14. Put the baking pan with the loaves from the step 13 into the oven; Baste the loaves with the teriyaki sauce from the step 9 every 10 minutes for a total of 30 minutes; Bake for 5 more minutes; Take the pan out of the oven; Slice.
15. Pour the remaining teriyaki sauce from the step 9 to a saucepan; Bring to the boil over a medium heat; Turn off the heat.
16. Arrange the green cabbage leaves on serving plates; Arrange the loaf slices from the step 14 on the serving plates; Drizzle the sauce from the step 15 over the slices; Serve hot.
