TAMAGOYAKI - SWEET ROLLED OMELET

INGREDIENTS :

4 eggs (large), 3.5T toasted nori shreds, 1T oil.

SEASONINGS:
1T sugar, 1/2 tsp salt.

PREPARATION :

1. Beat eggs; Gradually add seasonings; Stir to mix well; Divide into 3 equal potions.
2. Heat a non-stick rectangular omelet pan over a high heat; Add 1/2T oil and swirl the pan to coat the bottom of the pan evenly; Turn to a medium heat; Add a portion of the egg mixture; Swirl the pan to spread the egg mixture evenly; Sprinkle with some toasted nori shreds; Cook over a medium heat till the bottom is firm (about 2 minutes); Carefully lift the narrow edge of the omelet up with chopsticks; Roll the omelet away from you as tightly as possible without tearing it; Gently lift the omelet roll up; Add 3/4 tsp oil and swirl the pan; Add a portion of the egg mixture; Swirl the pan to spread the egg mixture evenly; Sprinkle with some toasted nori shreds; Cook over a medium heat till the bottom is firm (about 2 minutes); Carefully lift the narrow edge of the newly made omelet up with chopsticks; Roll the omelet away to wrap the 1st created omelet roll by starting the end with 1st created roll; Gently lift the omelet roll up; Add the remaining oil and swirl the pan; Add the remaining egg mixture; Sprinkle with the remaining toasted nori shreds; Swirl the pan to spread the egg mixture evenly; Cook over a medium heat till the bottom is firm (about 2 minutes); Carefully lift the narrow edge of the newly made omelet up with chopsticks; Roll the omelet away to wrap the created omelet roll by starting the end with the created roll; Turn off the heat.
3. Transfer the egg roll to kitchen paper; Cover the top with another kitchen paper; Gently and evenly press on the roll to remove any excess oil and moisture; Leave the roll at the room temperature to cool completely; Slice.
