SAUTEED PORK WITH GINGER AND TOMATO

INGREDIENTS :

220g thin-cut boneless pork loin chops, 1 tomato, 30g ginger, 1/2 head of cabbage, 4T cornstarch, 2 tsp oil, 2 tsp salt.

SEASONINGS:
(1) 1 tsp mirin, some ground white pepper.
(2) 1.5T caster sugar, 3T soy sauce, 90ml sake.

PREPARATION :

1. Rinse pork loin chops in running water for 8 minutes; Drain; Tenderize with a meat mullet for 15 minutes; Marinate in seasoning (1) for 30 minutes.
2. Peel, rinse and grate ginger.
3. Cut off the hard end of cabbage; Rinse in running water for a few minutes; Drain; Shred; Soak in cold water with some salt for 15 minutes;
Lift the cabbage up and drain.
4. Rinse, core and chop a tomato.
5. Add seasoning (2) to a bowl; Stir till the sugar is dissolved.
6. Pour 4T cornstarch to a shallow plate; Dust the pork from the step 1 with the cornstarch.
7. Add 2 tsp oil to a non-stick frying pan; Swirl the pan; Heat over a medium-high heat; Arrange the pork from the step 6 in the pan; Sear both sides over a medium heat till golden brown; Turn to a low heat; Add the sauce from the step 5; Simmer over a low heat till the sauce has thickened; Add the tomato; Bring to the boil over a medium heat; Add the ginger; Toss briefly; Turn off the heat; Arrange on serving plates with the side of the cabbage.
