BEEF ASPARAGUS ROLLS

INGREDIENTS :

125g rib eye beef slices with roughly 6mm thickness, 12 asparagus spears, 2T oil, 1.5T sea salt, 6g ginger.

SEASONINGS:
(1) 48ml mirin, 48ml of sake.
(2) 144ml light brown sugar.
(3) 24ml light soy sauce.
(4) some lemon juice, some ground black pepper, some mirin.

PREPARATION :

1. Peel, rinse and mince ginger.
2. Pour seasoning (1) to a pot; Bring to the boil over a high heat; Cook over a medium heat for 2 minutes; Turn to a low heat; Add seasoning (2); Stir over a low heat till dissolved; Add seasoning (3) and the ginger; Bring to the boil over a high heat; Turn to a medium heat; Cook over a medium heat for 15 minutes (stir occasionally); Turn to a low heat; Simmer over a low heat for 25 minutes; Turn off the heat; Cool at the room temperature.
3. Rinse beef slices in running water for 3 minutes; Drain; Marinate in seasoning (4) for 15 minutes.
4. Cut off the hard ends of asparagus; Rinse in running water; Drain; Blanch in boiling water with some oil and salt for 6 minutes; Lift the asparagus up; Rinse in running water briefly; Drain; Cut each into 3 sections.
5. Lay the beef slice from the step 3 on a cutting board; Sprinkle both sides of the slice with some sea salt; Arrange 2 asparagus on the first third of the beef slice, extending about 6mm over the edge of the beef slice; Pick up the edge of the slice; Fold and roll over the asparagus tightly (repeat the step 5 till the ingredients are used up).
6. Heat a non-stick skillet with 1T oil over a medium heat (roughly for 45 seconds); Arrange the beef rolls in the skillet with the seam side facing the skillet; Pan-fry over a medium heat for 30 seconds; Turn the rolls over; Cook over a medium heat for 30 seconds;
Turn off the heat; Transfer the rolls to a clean plate.
7. Add 1/4 cup of the teriyaki sauce from the step 2 to the skillet from the step 6; Bring to the boil over a high heat; Return the rolls to the skillet; Cook over a medium heat for 2 minutes (turn the rolls frequently); Turn off the heat; Arrange on serving plates; Serve either hot or at room temperature.
