FRESH OYSTERS ON THE HALF SHELL

INGREDIENTS :

10 fresh oysters in shells, 1 daikon, 4 dried red chili peppers, 1 lemon, some coriander.

PREPARATION :

1. Cut off the stems of dried red chili peppers; Seed; Wipe clean with damp kitchen paper.
2. Peel, rinse and cut off both ends of daikon; Drain; Cut the daikon into a piece with the similar length of the dried red chili peppers.
3. Make 4 holes in one end of radish with a pointed chopstick; Plug the chili peppers into the holes with the chopstick; Grate together; Arrange in a serving sauce plate.
4. Cut off the stems of coriander; Rinse and drain.
5. Rinse a lemon; Cut into wedges; Seed.
6. Scrub shells of oysters in running water; Wrap one hand in a clean dish towel and hold the oyster with the cupped shell down and the narrow hinged end towards you; Push the point of an oyster knife into the small gap in the hinge and twist it between the shells till the hinge breaks; Lever open the top shell; Slide the knife along the inner edges of the top shell and sever the muscle that joins the oyster to the shell; Lift off the top shell; Arrange on a serving plater full of ice; Arrange the serving sauce plate from the step 3 in the center surrounding with the coriander; Garnish with the lemon wedges; Serve immediately.
