THICK PORK SOUP

INGREDIENTS :

270g boneless pork loin, 2 potatoes, 1 carrot, 6 stems of spring onion, 220g daikon, 13g ginger, 1T oil.

SEASONINGS:
(1) 1 tsp sake, 1 tsp mirin, 1 tsp caster sugar, 1 tsp colorless soy sauce.
(2) 2 cups of broth, 3 cups of
water.
(3) 3T shiro miso (i.e. white miso).
(4) 3T shiro miso.

PREPARATION :

1. Rinse pork loin in running water for 8 minutes; Drain; Tenderize with a meat mallet for 15 minutes; Cut into chunks; Marinate in seasoning (1) for 30 minutes.
2. Peel, rinse and cut off both ends of a carrot; Cut into small cubes.
3. Peel, rinse and cut off both ends of daikon; Cut into small cubes.
4. Rinse and cut off both ends of spring onion; Chop finely.
5. Peel, rinse and chop ginger finely.
6. Peel, rinse and cut potatoes into small cubes.
7. Add 1T oil to a non-stick skillet; Swirl the skillet to evenly coat the bottom of the skillet; Heat over a high heat; Turn to a low heat; Add the ginger; Stir-fry over a low heat till fragrant; Add the pork; Stir-fry over a low heat for 2 minutes; Turn off the heat.
8. Pour seasoning (2) to a dutch oven; Bring to the boil over a high heat; Turn to a low heat; Add the carrot, the daikon and potatoes; Bring to the boil over a high heat again; Turn to a low heat; Add the pork mixture from the step 7; Cover the oven with its lid; Cook over a low heat till the potatoes are almost done; Uncover; Add seasoning (3); Stir over a low heat for 6 more minutes; Skim scum; Add seasoning (4) and most of the spring onion; Stir over a low heat till well mixed; Turn off the heat; Arrange in serving bowls; Garnish with the remaining spring onion; Serve immediately.
