PUMPKIN WITH KONNYAKU SOUP

INGREDIENTS :

1 pumpkin (small), 8 cherry potatoes, 38g snow peas, 1 pack of enoki mushrooms, 1 pack of konnyaku.


SEASONINGS:
(1) 3 cups of chicken broth.
(2) 2T momiji oroshi.
(3) 1t salt, 1/2t ground black pepper.

PREPARATION :

1. Cut pumpkin into halves; Discard the seeds; Peel; Cut into small pieces; Rinse and drain.
2. Tear the hard vein off from both sides of snow peas; Rinse and drain.
3. Trim off the roots of enoki mushrooms; Rinse and drain; Separate into a few portions.
4. Rinse konnyaku and drain; Cut into slices.
5. Soak cherry tomatoes in water for 20 minutes; Lift the tomatoes up; Rinse and drain; Cut off the stems; Cut each into halves.
6. Pour seasoning (1) to a pot; Bring to the boil over a high heat; Turn to a low heat; Add the pumpkin and seasoning (2); Stir over a low heat till well mixed; Turn to a medium heat; Bring to the boil over a medium heat; Turn to a low heat; Cover the pot with its lid; Cook over a low heat for 10 minutes; Uncover; Add the konnyaku; Cook over a low heat for 6 minutes; Add all the remaining ingredients; Turn to a high heat; Cook over a high heat for 5 minutes; Turn to a low heat; Add seasoning (3); Stir over a low heat till mixed; Serve immediately.
