PORK AND ASSORTED VEGETABLES MISO SOUP

INGREDIENTS :

454g boneless pork rib, 1 daikon, 1 carrot, 1 potato, 1 cucumber, 6 shiitake mushrooms, 12g ginger, 2 stalks of spring onion.

SEASONINGS:
(1) 1/2 tsp mirin, 1/2 tsp caster sugar.
(2) 1L broth, 1.3L water.
(3) 1/4 cup of red miso.
(4) 1T mirin, 1/4 cup of red miso.

PREPARATION :

1. Rinse pork rib in running water for 6 minutes; Drain; Cut into pieces; Blanch in boiling water for 30 seconds; Lift the pork up; Marinate in seasoning (1) for 30 minutes.
2. Peel, rinse and slice ginger.
3. Peel and rinse a daikon; Cut off both ends; Cut into pieces.
4. Peel and rinse a carrot; Cut off both ends; Cut into pieces.
5. Peel, rinse and cut a potato into pieces.
6. Rinse shiitake mushrooms; Drain; Trim off the stems; Slice.
7. Peel and rinse a cucumber; Cut off both ends; Cut into pieces.
8. Cut off both ends of spring onion; Rinse; Drain; Chop most; Shred the remaining.
9. Add seasoning (2) and the ginger to a pot; Bring to the boil over a high heat; Turn to a low heat; Add the pork from the step 1; Cover the pot with a lid; Simmer over a low heat for 1 hour; Uncover; Discard the ginger; Add the daikon and the carrot; Cover the pot with its lid; Simmer over a medium heat for 15 minutes; Uncover; Add the potato; Cover the pot with its lid; Simmer over a medium heat for 10 minutes; Uncover; Ladle some soup with a spatula to a bowl; Cover the pot with its lid; Turn to a low heat.
10. Add seasoning (3) to the bowl with some soup; Stir till smooth; Uncover the pot from the step 9; Stir in the seasoning (3) mixture; Cover the pot with its lid; Simmer over a low heat for 20 minutes.
11. Add seasoning (4) to a bowl; Stir till smooth.
12. Uncover the pot from the step 10; Stir in the seasoning (4) mixture; Add the shiitake mushrooms and the cucumber; Cover the pot with its lid; Cook over a low heat for 15 more minutes; Uncover; Stir in the chopped spring onion; Turn off the heat; Arrange in serving bowls; Garnish with the remaining spring onion.
