4 cups of water, 2t powdered dashi, 175g block soft tofu, 4 shiitake mushrooms, 4T miso, 2 stalks of spring onion, some roasted sesame seeds, some salt.


1. Soak tofu into water with some salt for 15 minutes; Remove and rinse; Drain; Cut into cubes.
2. Rinse, trim the stems of and slice shiitake mushrooms.
3. Rinse and chop spring onion.
4. Pour 4 cups of water to a pan; Add 2t powdered dashi;
Bring to the boil over a high heat; Add the shiitake mushrooms and tofu; Turn to a low heat; Simmer for 3 minutes; Stir in 4T miso; Simmer till dissolved completely; Sprinkle with the spring onion; Turn off the heat; Arrange in a serving bowl; Garnish with the roasted sesame seeds.
