1 onion, 60g bacon slices, 2 eggs, some parsley, 1T cornstarch, 2 cups of water.

(1) 1 tsp caster sugar, 1 tsp sake.
(2) 2 tsp soy sauce, 1 tsp salt.


1. Peel, rinse and slice onion.
2. Cut bacon into pieces; Marinate in seasoning (1) for 20 minutes.
3. Rinse, drain and chop parsley finely.
4. Beat eggs to a bowl; Add 1T cornstarch; Stir to mix well.
5. Pour 2 cups of water to a small saucepan; Add the onion and bacon from the step 2; Bring to the boil over a high heat; Add seasoning (2); Stir over a high heat briefly; Turn to a low heat; Stir in the egg solution; Keep on stirring over a low heat till the eggs set; Turn off the heat; Arrange in serving bowls; Garnish with the parsley.
