TOFU SALAD WITH SESAME DRESSING

INGREDIENTS :

1 block of firm tofu (roughly 500g), 390g cherry tomatoes, 2 mini cucumbers, 50g daikon sprouts, 10 shiso leaves, 5 stems of basil leaves, 1 head of roman lettuce, ½ cup of toasted white sesame seeds, 2 cloves of garlic.

SEASONINGS:
½ tsp salt, ½ cup of canola oil, ¼ cup of soy sauce, 1T caster sugar.

PREPARATION :

1. Peel, rinse and mince garlic.
2. Add ½ cup of toasted white sesame seeds to a food processor; Process for a few seconds; Add seasonings and the garlic; Process for 30 seconds; Transfer to a bowl.
3. Cut off the head of lettuce; Tear into petals; Rinse in running water for a few minutes; Drain; Tear into pieces.
4. Discard the wilted daikon sprouts; Rinse in running water for a few minutes; Drain; Chop.
5. Rinse and drain shiso leaves; Shred.
6. Rinse and drain basil; Discard the stems.
7. Rinse cucumbers; Cut off both ends; Slice.
8. Rinse cherry tomatoes; Discard the stems; Cut into quarters.
9. Drain tofu; Cut into cubes.
10. Arrange the lettuce in serving plates; Drizzle with some dressing from the step 2; Arrange the tofu, the tomatoes and the cucumbers on the top of the lettuce; Drizzle with some dressing from the step 2; Spread the daikon sprouts, the basil leaves and some of the shiso leaves over the plates; Pour the remaining dressing from the step 2 over the salad; Garnish with the remaining shiso leaves.
