SOBA SALAD

INGREDIENTS :

227g dry soba noodles, 1 clove of garlic, 1 Japanese cucumber, 1 cup of edamame, 10 shiitake mushrooms, 1 stalk of spring onion, some salt, some oil.

SEASONINGS:
(1) some salt, 1T oil.
(2) 1/2 cup of canola oil, 2T dark sesame oil, 1/2 cup of rice vinegar, 2T evaporated cane juice.

PREPARATION :

1. Peel and rinse garlic.
2. Blanch soba in boiling water with seasoning (1) and the garlic till al dente (about for 4 minutes); Lift the soba up; Rinse in running water till cool; Drain.
3. Add seasoning (2) to a bowl; Mix well to be dressing; Sprinkle with dressing some over the soba.
4. Rinse shiitake mushrooms; Drain; Trim off the stems; Slice; Blanch in boiling water with some oil for 4 minutes; Lift them up; Drain; Marinate in 2T dressing from the step 3 till ready to use.
5. Cut off both ends of spring onion; Rinse and drain; Chop.
6. Rinse a Japanese cucumber; Cut off both ends; Slice; Sprinkle with some dressing from the step 3 over the cucumber.
7. Rinse edamame; Blanch in boiling water with some salt for 3 minutes; Lift them up; Rinse in running water till cool; Discard the shells; Sprinkle with some dressing from the step 3 over the edamame.
8. Arrange the cucumber slices at the bottom of serving plates; Arrange the soba on top of the cucumber at the center of the plates; Put the shiitake mushrooms on top of the soba; Pour the edamame over the plates; Garnish with the spring onion; Serve with the dressing from the step 3 on the side.
