SALMON ROE WITH DAIKON IN LEMON CUP

INGREDIENTS :

230g daikon, 2 lemons, 115g fresh salmon roe.

PREPARATION :

1. Peel, rinse and grate daikon with a grater; Transfer to a colander to drain.
2. Rinse lemons; Cut into halves; Squeeze for juice; Scoop out the flesh with a spoon; Cut a small piece from the bottom of each lemon half so that it stay upright.
3. Fill each lemon half with 2T grated daikon; Drizzle with some lemon juice; Arrange 1T salmon roe on the top of the daikon; Drizzle with some lemon juice; Arrange the lemon halves on serving plates.
