340g daikon, 1T toasted white sesame seeds, some spring onion, 2 limes.

1/3 cup of caster sugar, 1T ume (salted ume plum paste).


1. Rinse daikon; Cut off both ends; Peel; Rinse and drain; Cut into thin matchsticks.
2. Cut off both ends of spring onion; Rinse and drain; Chop.
3. Rinse limes; Cut each into halves; Juice.
4. Add the daikon to a big mixing bowl; Add seasonings and the lime juice from the step 3; Toss to mix well; Arrange in serving plates; Sprinkle with some toasted white sesame seeds; Garnish with the spring onion.
