STEWED PUMPKIN

INGREDIENTS :

2 pumpkin (small), 1 cup of dashi stock.

SEASONINGS:
2T mirin, 2T rice syrup.

PREPARATION :

1. Rinse pumpkins; Peel and seed; Cut into pieces.
2. Add 1 cup of dashi to a heavy-based pan; Bring to the boil over a high heat; Turn to a low heat; Add the pumpkin pieces; Add seasonings; Cover the pan with a lid; Simmer over a low heat for 13 minutes; Turn off the heat; Arrange in serving plates.
