STEWED DAIKON IN SWEET MISO SAUCE

INGREDIENTS :

1 daikon, 1.5 cups of water from the first rinsing of white rice.

SEASONINGS:
1/3 cup of mild brown miso, 1/4 cup of sugar, 1T sake, 3/4 cup of konbu dashi.

PREPARATION :

1. Cut off both ends of a daikon; Peel; Rinse and drain; Cut into pieces.
2. Pour 1.5 cups of water from the first rinsing white rice to a pot; Arrange the daikon into the pot; Cover the pot with a lid; Simmer over a low heat for 15 minutes; Lift the daikon up; Turn off the heat.
3. Set the liquid aside, leaving 3T of the liquid in the pot; Add seasonings; Stir to mix well; Bring to the boil over a high heat; Turn to a low heat; Return the daikon to the pot; Cover the pot with its lid; Simmer over a low heat for 3 hours; Turn off the heat; Arrange in serving plates.
