2 burdock roots (large), 1T oil, 1 cup of Dashi stock.

3T soy sauce, 3T mirin, 1T sugar.


1. Rinse burdock roots; Cut off both ends; Peel; Rinse and drain; Cut into sections.
2. Heat a heavy-based pan with 1T oil over a high heat; Add the burdock roots; Saute over a medium heat for 5 minutes; Turn to a low heat; Add 1 cup of Dashi stock; Bring to the boil over a high heat; Turn to a low heat; Add seasonings; Stir to mix well; Simmer over a low heat till most of the liquid has been absorbed; Turn off the heat; Arrange on serving plates.
