JAPANESE-STYLED HAMBURGER STEAK

INGREDIENTS :

340g ground beef, 113g ground pork, 1 onion, 1 egg, 3T oil, 2T sake, some sugar snap peas.

SEASONINGS:
(1) 1/2 tsp lemon juice, 1/4 tsp sake, 1 tsp granulated sugar.
(2) 1/4 tsp sake, 1/4 tsp ground black pepper.
(3) 1/4 cup of low-fat milk, 1/3 cup of panko (i.e. Japanese bread crumbs).
(4) 1/2 tsp salt, 1/4 tsp ground black pepper.
(5) 1 cup of tonkatsu sauce, 1/4 cup of red wine, 1/4 cup of water, 2T ketchup.

PREPARATION :

1. Rinse ground beef briefly; Drain; Marinate in seasoning (1) for 30 minutes.
2. Rinse ground pork briefly; Drain; Marinate in seasoning (2) for 30 minutes.
3. Peel, rinse and mince onion.
4. Beat an egg to a bowl; Beat lightly.
5. Heat a non-stick pan with 1T oil over a high heat; Turn to a low heat; Stir-fry the onion over a low heat till browned (about 6 minutes); Turn off the heat; Cool at the room temperature.
6. Add seasoning (3) to a bowl; Mix.
7. Add seasoning (4), the ground beef from the step 1, the ground pork from the step 2, the egg solution, the panko mixture from the step 6 and the cooled onion from the step 5 to a stainless steel bowl; Stir to mix well; Slap the mixture hard to a cutting board quite a few times; Divide into 4 equal portions; Shape each into patty with 4 cm thickness.
8. Add seasoning (5) to a saucepan; Stir to mix well; Cook over a low heat for 4 minutes; Turn off the heat; Cover with the lid of the pan.
9. Rinse sugar snap peas; Cut off both ends; Blanch in boiling water with some oil for 3 minutes; Lift the peas up; Drain.
10. Heat a non-stick frying pan with 2T oil over a high heat; Arrange the patties in the pan; Pan-fry over a high heat till browned crusts starts forming at the bottom (about 4 minutes); Flip over; Pan-fry over a high heat till browned crusts starts forming at the bottom (about 4 minutes); Add 1T sake; Cover the pan with its lid; Cook over a low heat for 2 minutes; Uncover; Carefully turn the patties over; Add the remaining sake; Cover the pan with its lid; Cook over a low heat for 2 more minutes; Uncover the pan; Pour the sauce from the step 8 into the pan; Turn the patties over to coat both sides with the sauce; Cook over a low heat for 2 minutes; Turn off the heat; Arrange on serving plates with the sugar snap peas on the side; Serve immediately.
