BRAISED PORK BELLY

INGREDIENTS :

256g pork belly, 1/2T oil, 13g ginger, 1 cucumber (small).

SEASONINGS:
(1) 2 tsp mirin.
(2) 2 cups of canned broth, 1/2 cup of sake.
(3) 1 cup of canned broth, 1/2 cup of water, 3/4 cup of caster sugar, 1/2 tsp black peppercorns, 1 cinnamon stick.
(4) 2T hoisin sauce.
(5) 1 tsp cornstarch, 1 tsp water.

PREPARATION :

1. Rinse pork belly in running water for 4 minutes; Drain; Marinate in seasoning (1) for 30 minutes.
2. Peel, rinse and mince ginger.
3. Heat a non-stick saucepan with 1/2T oil over a high heat; Arrange the pork belly from the step 1 in the pan with the fatty side facing the pan; Cook over a high heat till browned (roughly 2 minutes); Turn to a medium heat; Flip the pork belly over; Cook over a medium heat till browned; Turn off the heat; Lift the pork belly up.
4. Add seasoning (2) to a saucepan; Bring to the boil over a high heat; Turn to a low heat; Arrange the pork belly from the step 2 and the ginger; Bring to the boil over a high heat again; Turn to a low heat; Simmer over a low heat for 45 minutes; Turn off the heat; Lift the pork belly up.
5. Add seasoning (3) to another saucepan; Bring to the boil over a high heat; Turn to a low heat; Add the pork belly from the step 4; Bring to the boil over a high heat; Turn to a low heat; Cover the pan with its lid; Simmer over a low heat for 110 minutes; Turn off the heat; Cool at the room temperature; Transfer the pork belly together with the cooking sauce to a container; Chill in the fridge for a day.
6. Rinse a cucumber; Cut off both ends; Slice.
7. Add seasoning (5) to a bowl and mix well.
8. Add seasoning (4) and 1/2 cup of the cooking sauce from the step 5 to a pan; Stir to mix well; Bring to the boil over a high heat; Turn to a low heat; Gradually stir in the seasoning (5); Stir over a low heat till the sauce has thickened; Turn off heat.
9. Lift the pork belly from the remaining cooking sauce from the step 5; Slice; Arrange in serving plates; Garnish with the cucumber; Serve with the sauce from the step 8 on the side.
