SPINACH SALAD

INGREDIENTS :

300g spinach, 3T bonito flakes, 3 tsp salt, 2 tsp oil, 1 tsp caster sugar.

SEASONINGS:
1/2 cup of dashi broth, 1.5T soy sauce, some sea slat.

PREPARATION :

1. Discard the wilted leaves of spinach; Soak in water with some salt for 20 minutes; Lift the spinach up; Rinse in running water for 3 minutes; Drain; Blanch in boiling water with 2 tsp oil, 1 tsp caster sugar and some salt for 3 minutes; Lift the spinach up; Rinse in running water till cool; Drain.
2. Add seasonings to a saucepan; Stir over a low heat till mixed; Turn off the heat; Cool at the room temperature.
3. Arrange the spinach on a rolling mat; Roll up and squeeze out water gently but firmly; Remove the mat; Cut off the stems; Cut into sections with 4-cm length; Arrange in serving plates; Drizzle with the seasonings; Garnish with some bonito flakes; Serve immediately.
