SAVORY EGG CUSTARD

INGREDIENTS :

100g boneless chicken breast, 12 small shelled cocktail shrimps, 4 dried shiitake mushrooms, 30g naruto (i.e. fish cake), 3 eggs, 1 lime, 1/2 cup of water.

SEASONINGS:
(1) 1 tsp sake, 2/3 tsp chicken bouillon powder, 1T mirin, 1 tsp colorless soy sauce.
(2) 1/2 tsp mirin, 1/2 tsp sake.
(3) 1.5 cups of dashi broth.

PREPARATION :

1. Rinse chicken breast in running water for 8 minutes; Discard the skin; Drain; Cut into small pieces; Marinate in seasoning (1) for 45 minutes.
2. Rinse dried shiitake mushrooms; Soak in 1/2 cup of
water till soft; Lift the mushrooms up; Trim off the stems; Slice thinly; Strain the soaking water through a fine-mesh sieve.
3. Rinse a lime; Peel and slice the peel thinly; Cut into halves; Juice.
4. Rinse shelled shrimps in running water for a few seconds; Marinate in seasoning (2) together with the lime juice from the step 3 for 40 minutes.
5. Rinse and slice naruto.
6. Divide the chicken, the shiitake mushrooms, the shrimps and the naruto into 4 equal potions; Arrange each portion at the bottom of steaming mugs.
7. Pre-heat an electric steamer.
8. Beat eggs to a bowl; Beat till well blended; Add seasoning (3) and the soaking from the step 2; Mix well; Strain through a cloth to the steaming mugs evenly; Break any bubbles on the surface with chopstick.
9. Arrange the steaming mugs into the steamer; Lay a clean kitchen towel between the steamer and its lid; Steam over a low heat for 18 minutes; Remove the mugs from the steamer; Garnish with the lime zest; Serve immediately.
