MUNG BEAN SPROUTS SALAD

INGREDIENTS :

450g mung bean sprouts, 10 small red radishes, 1T rice vinegar, some salt, 3T toasted white sesame seeds.

SEASONINGS:
2T mirin, 5T rice vinegar, 5T soy sauce, 1/4 tsp sesame oil.

PREPARATION :

1. Discard wilted mung bean sprouts; Cut off the ends; Soak in water with some salt for 15 minutes; Lift the sprouts up; Rinse in running water for 2 minutes; Drain; Blanch in boiling water with 1T rice vinegar for 1 minute; Lift the sprouts up; Rinse in running water till cool; Drain.
2. Rinse radishes; Cut off the ends; Slice thinly.
3. Add seasonings to a bowl; Mix well.
4. Arrange the mung bean sprouts in serving bowls; Drizzle with the dressing from the step 3; Toss lightly; Sprinkle with toasted white sesame seeds; Serve immediately.
