FLUFFY BOILED POTATOES

INGREDIENTS :

4 potatos, 1T salt, 1 cup of
bonito flakes, some coriander.

SEASONINGS:
3T light soy sauce, 1/2 tsp sake, 1 tsp sea salt.

PREPARATION :

1. Peel and rinse potatoes; Cut into halves; Cut each half into 9 chunks; Blanch in boiling water with 1T salt for 15 minutes; Lift the potatoes up and drain.
2. Discard the stems of coriander; Rinse and drain; Chop finely.
3. Add seasonings to a bowl; Mix well.
4. Heat a non-stick pan over a high heat; Turn to a low heat; Add the potatoes; Shake the pan over a low heat briefly for 3 minutes; Add the seasonings; Toss lightly; Sprinkle with bonito flakes; Turn off the heat; Arrange on serving plates; Garnish with the coriander.
