SWEET AND SPICY CELERY

INGREDIENTS :

680g celery, 1 dried red pepper, 1 pickled plum, 2T canola oil.

SEASONINGS:
(1) 1/4 cup of caster sugar, 3T soy sauce.
(2) 1 tsp sesame oil, 1 tsp toasted white sesame seeds.

PREPARATION :

1. Discard the leaves of celery; Trim off the strings; Rinse in running water for a few minutes; Drain; Slice.
2. Seed and mince a dried red pepper.
3. Discard the pit of pickled plum; Transfer to a bowl; Mash; Add seasoning (1); Mix well.
4. Add 2T oil to a non-stick skillet; Swirl the skillet; Heat over a medium heat; Add the red pepper; Stir-fry over a medium heat for 1 minute; Add the celery; Stir-fry over a low heat for 15 minutes; Add the seasoning mixture from the step 3; Turn to a medium heat; Bring to the boil over a medium heat; Turn to a low heat; Cook over a low heat till the liquid is almost completely absorbed; Turn off the heat; Add seasoning (2); Toss briefly; Arrange on a serving plate.
