STIR-FRIED DEEP-FRIED TOFU

INGREDIENTS :

4 blocks of deep-fried tofu, 450g napa cabbage, 3T toasted white sesame seeds, 2T oil.

SEASONINGS:
3T sake, 5T soy sauce, 1 tsp mirin.

PREPARATION :

1. Cut off the head of napa cabbage; Tear into petals; Soak in water for 15 minutes; Lift the cabbage up; Rinse in running water for a few minutes; Drain; Cut into squares with 4-cm length.
2. Blanch deep-fried tofu in boiling water for 30 seconds; Lift the tofu up; Drain; Cut into slices with 7mm thickness.
3. Add seasonings to a bowl; Mix well.
4. Add 2T oil to a skillet; Swirl the skillet to evenly coat the bottom of the skillet; Heat over a high heat; Turn to a low heat;
Add the cabbage; Stir-fry over a high heat till soft; Add the tofu; Stir-fry over a high heat briefly; Add the seasonings from the step 3; Stir-fry over a high heat till the sauce has almost been completely absorbed; Turn off the heat; Arrange on serving plates; Sprinkle with toasted white sesame seeds; Serve immediately.
