STIR-FRIED DAIKON GREENS WITH ABURA

INGREDIENTS :

300g daikon greens, 3 pieces of abura-age (i.e. fried tofu pouches),1/4 cup of dashi stock, 1T canola oil, some salt, 2T toasted white sesame seeds.

SEASONINGS:
1T soy sauce, 1T sake.

PREPARATION :

1. Discard the wilted daikon greens; Soak in water for 15 minutes; Lift them up; Rinse and drain; Slice.
2. Pat clean abura-age with damp kitchen paper; Slice.
3. Heat a non-stick skillet with 1T canola oil over a high heat; Add the daikon greens and some salt; Stir-fry over a high heat for 1 minute; Lift them up; Add 1/4 cup of dashi stock; Bring to the boil over a high heat; Add the abura-age; Cook over a high heat till most of the liquid has been absorbed; Return the daikon greens to the skillet; Add seasonings; Stir-fry over a high heat for 3 minutes; Turn off the heat; Arrange in serving plates; Sprinkle with toasted white sesame seeds.
