STIR-FRIED BITTER MELON WITH EGGS

INGREDIENTS :

100g bitter melon, 40g carrot, 2 eggs, some coriander, some bonito flakes, 2tsp oil.


SEASONINGS:
(1) 1/2 tsp seasalt.
(2) 1/4 cup of dashi broth, 1/2T soy sauce, 1/2T caster sugar, 1tsp mirin.

PREPARATION :

1. Rinse bitter melon; Cut off both ends; Cut into halves; Discard the seed; Slice; Blanch in boiling water for 30 seconds; Lift the bitter melon up; Immediately rinse in cold running water till cool; Drain.
2. Peel, rinse and cut off both ends of a carrot; Cut into halves; Slice; Blanch in boiling water for 30 seconds; Lift the carrot up;
Immediately rinse cold running water till cool; Drain.
3. Rinse and chop coriander finely.
4. Break eggs to a bowl; Whisk till well blended.
5. Add 2tsp oil to a non-stick pan; Heat over a high heat; Turn to a low heat; Add the bitter melon and seasoning (1); Turn to a medium heat; Stir-fry over a medium heat for 3 minutes; Turn off the heat; Set the bitter melon aside.
6. Add seasoning (2) to the pan; Stir over a low heat till the sugar dissolved; Add the carrot; Turn to a medium heat; Cook over a medium heat till the carrot is soft; Return the bitter melon to the pan; Cook over a medium heat till half of the sauce has been absorbed; Turn to a low heat; Stir in the egg solution; Stir-fry over a low heat briefly; Add most of the coriander; Cover the pan with its lid; Cook over a low heat for 1 minute; Uncover; Add the remaining coriander; Stir-fry over a low heat briefly; Turn off the heat; Arrange on a serving plate; Garnish with some bonito flakes.
