SPINACH WITH PEANUT SAUCE

INGREDIENTS :

180g spinach, some salt, 40g unsalted roasted peanuts, 1/2T oil, 1 tsp caster sugar.

SEASONINGS
2T salted peanut butter, 1 tsp caster sugar.

PREPARATION :

1. Discard the wilted leaves of spinach; Soak in water with some salt for 20 minutes; Lift the spinach up; Rinse in running water for 1 minute; Drain.
2. Add 1/2T oil to a non-stick frying pan; Swirl the pan to evenly coat the pan; Heat over a high heat; Add the spinach and 1 tsp caster sugar; Stir-fry over a high heat till the stems are tender but still crispy; Turn off the heat; Cool at the room temperature.
3. Add seasonings to a bowl; Stir till the sugar is dissolved.
4. Crush roasted peanuts.
5. Arrange the spinach in a serving plate; Pour the dressing from the step 3 over the spinach; Sprinkle wiht the peanuts.
