POTATO KIMPIRA WITH BACON

INGREDIENTS :

2 potatoes (medium), 2 bacon slices, 1 tsp toasted white sesame seeds, 2 stems of spring onion, 1T oil, some ground black pepper.

SEASONINGS:
(1) 1/4 tsp mirin, some sesame oil.
(2) 1T soy sauce, 1T caster sugar, 1T water.

PREPARATION :

1. Rinse bacon slices in running water for 1 minute; Drain; Chop roughly; Marinate in seasoning (1) for 30 minutes.
2. Peel, rinse and drain potatoes; Cut into matchsticks.
3. Rinse and cut off both ends of spring onion; Chop finely.
4. Add 1T vegetable oil to a non-stick frying pan; Swirl the pan to evenly coat the pan with oil; Heat over a medium heat; Add the bacon; Stir-fry over a medium heat till the bacon fat renders out; Add seasoning (2) and the potatoes; Stir-fry over a medium heat till the sauce is almost gone; Turn off the heat; Sprinkle with some toasted white sesame seeds; Toss briefly; Arrange in serving plates; Sprinkle with some ground black pepper; Garnish with the spring onion.
