200g sweet potato, 1 apple (large), 1T caster sugar, 1/3 tsp salt, 50ml water.

1 cup of water, 4g agar.


1. Peel, rinse and cut sweet potatoes into pieces with 8mm thickness.
2. Peel, rinse and cut an apple into pieces with 8mm thickness; Soak in water with some salt for a while; Lift the apple pieces up; Drain.
3. Pour 50ml water into a pan; Bring to the boil over a high heat; Turn to a low heat; Arrange the sweet potatoes and apple pieces into the pan; Cover the pan with its lid; Cook over a low heat till soft (roughly 10 minutes); Turn off the heat; Add 1/5 tsp salt; Mash (leaving some lumps).
4. Add seasonings to a pot; Stir over a low heat till dissolved; Gradually stir in 1T caster sugar over a low heat; Stir over a low heat till dissolved; Bring to the boil over a medium heat; Turn off the heat; Add the sweet potato and apple smash; Mix well.
5. Lay a piece of cling film with edges hanging on the sides of a rectangular mold; Transfer the mixture from the step 4 to the mold; Cool at the room temperature; Cover the top of the mold with a piece of cling film; Chill in the fridge at least till the jelly sets.
6. Take the mold out of the fridge; Remove the cling film on the top; Carefully pull out the jelly with the help of the cling film; Cut into pieces and arrange on serving plates; Ready to serve.
