a few strawberries, 1 kiwi, 1 half of small watermelon, 1 half of small cantaloupe, 82g sweet rice flour, some mint leaves, 215g canned sweet red beans, 5.5 cups of water, 2 cups of ice cubes.


1. Add 80g sweet rice flour to a stainless steel bowl; Gradually stir in 1/4 cup of water; Mix well; Knead into dough; Spread some remaining flour over a counter; Roll into a 30-cm-long cylinder; Cut into 28 pieces; Divide into 2 batches.
2. Add 2 cups of ice cubes and some water to a big bowl.
3. Pour 5 cups of water to a pot; Bring to the boil over a high heat; Press to slightly flatten each ball of a batch from the step 1 with your thumb and add to the boiling water; Swirl with a spoon; Cook over a high heat till the balls are floating; Lift the balls up with a slotted spoon; Transfer to the bowl with ice cubes (repeat the step 3).
4. Carefully drain the water in the bowl from the step 3; Rinse in running water for 30 seconds (keep on swirling); Drain.
5. Scoop the flesh of an half of a watermelon for balls.
6. Scoop the flesh of an half of a cantaloupe for balls.
7. Rinse strawberries; Hull and cut each into halves.
8. Peel and slice a kiwi.
9. Add the fruit to serving glasses; Arrange the mochi balls from the step 4 on top of the fruit; Put some canned sweet red beans in the center of each; Garnish with the mint leaves.
