ASSORTED FRUIT KUDZU ROOT VERMICELLI WITH BLACK SYRUP

INGREDIENTS :

30g kudzu root vermicelli, 30g watermelon, 30g honeydew, 1 cup of cold water.

SEASONINGS:
(1) 50ml water, 50ml caster sugar.
(2) 1 tsp water, 18ml black honey.

PREPARATION :

1. Add seasoning (1) to a bowl; Stir till the sugar is dissolved.
2. Scoop watermelon flesh for balls; Soak in the sugar water from the step 1 till ready to use.
3. Scoop honeydew flesh for balls; Add to the sugar water from the step 2 till ready to use.
4. Blanch kudzu root vermicelli in boiling water for 1 minute; Immediately lift the vermicelli up and rinse in running water till cool; Drain.
5. Add seasoning (2) to a bowl; Stir till well mixed; Transfer to sauce serving plates.
6. Arrange the kudzu root vermicelli from the step 4 in serving bowls; Pour some cold water into each serving bowl; Arrange the watermelon and honeydew balls on the top; Serve with the black honey mixture on the side.
