12 shrimps (large), 1 large egg, 1.5 cups of panko (i.e Japanese bread crumbs), 3 cups of oil, some salt, 2 limes.

(1) 1/4 tsp lemon juice, 1/4 tsp ground black pepper.
(2) 1/2 cup of all-purpose flour.


1. Discard the heads and tails of shrimps; Shell; Devein with toothpicks; Rinse and soak in salty water briefly; Lift the shrimps up and pat dry; Make 3 horizontal cuts across the belly of each shrimp; Marinate in seasoning (1) for 20 minutes.
2. Beat an egg to a bowl; Beat till well blended.
3. Add seasoning (2) to a shallow bowl.
4. Add 1.5 cups of panko in a shallow bowl.
5. Evenly coat each shrimp from the step 1 with the seasoning (2); Dip each flour-coated shrimp in the egg solution; Roll in the panko; Divide the shrimps into 4 batches.
6. Pour 3 cups of oil to a frying pan.
7. Bring the oil to the boil over a high heat; Turn to a low heat; Add a batch of the coated shrimp into the pan one by one; Deep-fry over a low heat for 3 minutes; Turn to a high heat; Deep-fry over a high heat for 30 seconds; Lift the shrimps up; Drain on kitchen paper; Skim off the floating stuff on the surface of the oil (Repeat the step 7 till all the shrimps are deep-fried).
8. Rinse limes; Cut each into quarters.
9. Arrange the crispy fried shrimps on serving plates; Serve with limes on the side.
