CLAM WITH ONION AND POTATO FRITTERS

INGREDIENTS :

280g frozen clam meat, 1 onion, 1 potato, 10 string beans, 2 eggs, 130g daikon, some lemon zest, 3 cups of oil, 1.5T cake flour, 195ml ice water, some lemon juice.

SEASONINGS:
(1) 1T mirin, 2 tsp sake, 1 tsp lemon juice, 1/2 tsp ground black pepper.
(2) 1/2 cup of cake flour, 1.5T cornstarch.

PREPARATION :

1. Thaw clam meat; Rinse in running water for 7 minutes; Drain; Marinate in seasoning (1) for 60 minutes.
2. Pull out the hard vein from the top to the end of string beans; Rinse and drain; Slice down the center; Cut into thirds.
3. Peel, rinse and cut a potato into matchstick strips.
4. Peel, rinse and slice an onion.
5. Peel, rinse and grate a daikon.
6. Beat an egg to a bowl; Beat till well blended; Beat the remaining egg to an egg separator for yolk.
7. Add the clams from the step 1, onion, potatoes and string beans in a mixing bowl; Sprinkle with 1.5T flour; Add the egg solution; Mix well.
8. Pre-heat an oven to 135 degree celcius.
9. Pour 195ml ice water to a big mixing bowl; Add the yolk from the step 7; Blend till well mixed.
10. Strain seasoning (2) through a sieve to the bowl from the step 9; Lightly whisk together, leaving a few lumps.
11. Lay baking paper in a baking pan; Put the pan in the oven.
12. Pour 3 cups of oil to a wide heavy-based pan; Bring to the boil over a high heat; Turn to a medium heat; Scoop 1/2 cup of the clam mixture from the step 7 up with a ladle; Add 1/4 cup of the flour mixture from the step 10; Lightly mix with a pair of chopsticks; Tip the mixture into the hot oil; Gently pull apart the mixture with the chopsticks; Cook over a medium heat for 2 minutes; Turn the fritter over; Cook over a medium heat for 2 minutes; Turn to a high heat; Cook over a high heat for 40 seconds; Lift the fritter up; Drain on kitchen paper; Put the fritter in the pan in the oven till ready to use; Skim off any floating stuff on the surface of the oil (repeat the step 12 till the ingredients are used up).
13. Pour the grated daikon from the step 5 to a strainer to drain the liquid; Arrange in sauce plates; Sprinkle with some lemon juice and lemon zest.
14. Arrange the fritters on serving plates; Serve with the grated daikon on the side.
